Don't forget this traditional favourite – it's so easy to make and tastes wonderful. Serve with lots of fresh veg.
Ingredients
1000 g potato(es), (1kg), peeled and thinly sliced
2 large onion(s), thinly sliced into rings
1 portion stock cube, chicken or vegetable, make up to 850ml (1 1/2 pints)
8 portion lamb cutlet, very lean
1 pinch salt
1/8 teaspoon pepper, freshly ground
3 sprig fresh thyme, to garnish
Instructions
Preheat oven to 190°C / fan oven 170°C / Gas Mark 5.
Layer the potatoes and onions alternately in a 2 litre (3 ˝ pint) casserole or baking dish, seasoning each layer lightly with a little salt and pepper and finishing with a layer of potatoes. Pour in the stock.
Cover and transfer to the oven. Bake for 45 minutes, then remove the lid and arrange the lamb cutlets over the top. Continue to cook for a further 30-35 minutes. Serve garnished with thyme sprigs.
Add 1 tsp mixed dried herbs to the stock, if you like.
